I prepare all my meals.  I’m trying to rebuild my immune system and restore my health by eating a more balanced diet.

we are retired.  I spent a lot of time eating out during those years,  of course there are only 2 of us, breakfast is mostly fruit, yogurt or nothing, dinner at noon, ya get the kitchen cleaned up and not have to spend the time in the evening, we eat whatever we think sound good for the supper, cereal, soup, etc.  My cooking far overshadows what one can get eating out, plus the same meal is half the price.

Being retired we some weeks eat out every night and then some weeks we eat in every night.  I figured this comes out to be cooking twice a week.  We both grew up in families that did not go out to eat due to budget constraints.  Dinner out for us was a pot luck at church or with my Dad’s co-workers for a summer picnic.  We ate in most nights as our two girls were growing up. Now we get to do whatever we want.

I cook 3 or 4 days a week and freeze extra portions so i dont have to cook if it’s hot or if I dont feel like cooking…I live in senior housing, so my kitchen is small and troublesome for spreading out and having enough prep space.  since I am diabetic and eat only fresh foods this is my solution.
