I wanted to edit my post, but still can’t find a way to do it. So to my list of having it all, I want to include good friends I have made during my journey.

I used to have nothing but an abusive husband, 3 children who I could barely keep fed, fear of not being able to pay the bills, ill health. I ran away from it all and lived in the streets, in a stranger’s van, in a mental hospital. Now I have it all. Good health, a wonderful husband who loves me unconditionally, our own business that pays the bills, puts organic food on the table, grown kids who have forgiven me for leaving them behind when I ran for my life. Nothing else matters to me.

What television show do you miss the most?

The L Word.” I can’t wait for it to come back again and am sad that this will be the last season.

In light of the salmonella outbreak, will you stop eating tomatoes?

To the beach, You are one fortunate woman living in a place where you have access to such beauty and perfect taste. We live full-time in a motor home and travel around the U.S. for our business. In the summer months, we keep our eye out for organic farm stands. We will be spending July-August in Asheville, NC, the most organic-friendly place we’ve stayed yet. They have farmers’ markets in different locations daily so the local organic farmers always have a place to sell their creations. And in the restuarants we visited when we were there in May ‘07, all the menus say “We support our local and organic farmers.” This is one reason why we put a deposit on a green-built condo that is going up next to the French Broad River. Asheville spoke to us when we were there last year and we want to live there when we retire.

There is nothing like the taste of a fresh picked summer tomato. As long as I can get organically grown heirloom tomatoes when they are in season, I’m a happy person!

What is your best recipe?

Cooking is one of my favorite things to do, probably because I love to eat so much! I always look for recipes that have very few ingredients, ideally less than 5. And if it sounds good, but doesn’t have the ingredients I have on hand or I think I can make it healthier, I change it to fit. Here is one of my all-time favorite chicken recipes. Rich Baked Artichoke Chicken 4 boneless, skinless chicken breasts 1 (14 oz.) can of artichoke hearts in water, drained, chopped 3/4 grated parmigiano reggiano cheese 3/4 cup mayonnaise (I use the non-dairy kind) 2-4 large garlic cloves (depending on how much you love garlic) Pound chicken breasts until fairly thin and place in greased baking dish. Combine all of the other ingredients and spread over chicken to cover completely. Bake uncovered at 425 degrees for 20-25 minutes, or til chicken is done. I hope you love this as much as all the people I’ve served this wonderful dish to since I’ve discovered it!

My husband makes me laugh out loud every day. I also LOL whenever I see John Stewart imitate Bush.
